LOADED CAULIFLOWER BAKE

Ingredients:
1 large head Cauliflower (cut into bite size pieces)
6-8 strips bacon (your choice of brands - cooked and crumbled)
6 Tablespoons chopped Chives
1/2 cup Mayonnaise
1/2 cup sour cream (your choice of brands)
2 cups Colby Jack Cheese
8 oz sliced mushrooms (for those who don't like them, leave out)

Directions:
- preheat oven to 425F
- In large pot boil water and cook cauliflower (8-10 min)
- In large bowl combine sour cream, mayo, 1/2 of bacon, 3 tbs chives
- add cheese, mushrooms (optional) and mix well
- place in baking dish, cover with remaining cheese and the rest of bacon
- Bake for 15-20 minutes until cheese is melted
- Top with remaining chives and serve.
- Enjoy!
